Galil Mountains Winery's wonderful Sauvignon Blanc is made of 100% Israeli Souvignon Blanc grapes grown in the mountains of the upper Galilee. Harvested by hand and then gently squeezed in whole clusters, fermenting for about three weeks at various temperatures between 18° and 12° Celsius. After the fermentation, the wine is filtered of its sediment and kept for several months in stainless steel containers where it undergoes a light yeast process. A light yellowish wine, it has the aromas of passiflora, lychee, fig and papaya, a delicate tartness and a long, playful finish. The overcast winter preceding the growing season of the grapes for this wine have provided the cold temperature that makes the best wine grapes. During their ripening season, there was only a single hot week, so the grapes used in this wine are especially ideal for the job. With an Alcohol level of 13%, an acid content of (g / L) 6.7, and a pH of 3.22, this Israeli wine will be at its finest for the first year, aging well also for the next 1-2 years, if stored correctly. Serve at a temperature of 8-12 ° C, alongside such foods as goat cheese, green vegetables, or delicate fish.
