The Chenin Blanc grape makes a truly unique and wonderful wine. Full-bodied and sweet, with a kick of acidity, it can handle itself. For that reason, it pairs delightfully with sweet and sour flavored foods, like Asian cuisine or meat made with apples. However, despite its beauty alongside these foods, it is also a very flexible flavor, delighting the palate alongside vegetable dishes, desert, and many more. This particular wine, made in Shvo Vineyards, is made by squeezing full grape clusters as is done with champagne, and then is spontaneously fermented in French oak barrels for a full year. Shvo Vineyards are located at 800m above sea level in the heart of the Sasa nature preserve, north of Mount Meron. The beautiful weather of the area and the sea breeze from the west also positively impact the grapes for this gorgeous gift worthy wine.
