The 72 Winery, a boutique winery in the Upper Galilee, is proud to present Alad - a blend of Cabernet Sauvignon, Merlot, and Shiraz grapes. 72 Winery ages the award-winning Alad wine for 18 months in French oak barrels.
As the boutique wine sleeps in the barrels, it mellows, slowly absorbing flavors and aromas from the barrel. After bottling, the wine is again aged for months, after which it is ready to be drunk, but can also age another 8 to 10 years when cellared appropriately.
The Alad wine boasts a full, rich, aged flavor with hints of fruit and spices, refreshing and harmonic with a long final note. Alad pairs well with heavy or light meat dishes or with fine, hard aged cheeses and should be served at 65.5 – 68 degrees Farenheit (18-20 degrees C).
72 Winery uses grapes from well-established vineyards in northern Israel, such as Kerem Ben-Zimra, a moshav near Safed, Mount Meron, and the ancient Kabbalistic region of Or HaGannuz. These vineyards are known from producing excellent wine grapes, thanks to optimal soil conditions – terra rossa and basalt – and the cold Galilee winters. 72 Winery's grapes are cultivated at an average altitude of 2560 to 2850 feet(780-870 meters) above sea level, and carefully handpicked at night.
The Kabbalistic motif has influenced the winery since it was founded. The Kabbalistic saying 'Everything hidden has been blessed' described the first two years of the winery's existence, which were two years of unseen work.
The name 72 Winery refers to 72 names, a concept that according to the Kabbala is the key to luck and blessing, perfection and happiness. The Hebrew acronym 'ALAD' is also a Kabbalistic term, 'Ana Lamadni Datcha,' which symbolizes protection against the evil eye, troubles, and envy.
